My Commitments

1) I will "stay on the bus" until I hit my goal - no matter how long it takes or how many times I go off track along the way
2) I will be accountable for what I eat - the good, the bad and the ugly
3) I will exercise every day - even if it's only for 10 minutes
4) I will focus on learning what works for me and making the best choices I can - not on being perfect




Blueberry Trail Mix Oatmeal

Great start to the morning - oatmeal made with milk and topped with fresh blueberries, sugar-free syrup, and Berry Trails trail mix. Yum!

Shake 'n Bake Ranch Chicken Legs

Found a delicious twist on Shake 'n Bake chicken right on the back of the box:





Ingredients:

1 package chicken legs
1/2 cup light ranch dressing
1 packet Shake 'n Bake coating mix

Remove skin from chicken legs. Pour dressing over chicken in large resealable bag; seal bag. Refrigerate 30 minutes.

Heat oven to 400 degrees F. Remove chicken from bag; discard bag and dressing. Dip chicken in coating mix in shallow pan, turning to evenly coat each piece.

Bake in foil-lined pan 40 - 45 minutes or until chicken is done.

Scrambled Eggs in a Cup

Love this super quick, no fuss way to make eggs in the morning!




Ingredients:

2 eggs
2 tbsp. milk
1 slice or 2 tbsp. shredded lowfat cheese

Coat 12-oz. microwave-safe coffee mug with cooking spray. Add eggs and milk; beat until blended.

Microwave on high 45 seconds; stir. Microwave until eggs are almost set, 30 - 45 seconds.

Top with cheese; season with salt and pepper.
